Nut Chutney

1/2 cup Cashews
1/2 cup Pecans
1/2 cup Almonds
1/2 cup Filberts/Hazelnuts
1/2 cup Brazil nuts
1/2 cup Pistachio nutmeats
1 cup Mango or Papaya (small diced)
1 cup Ginger, fresh or candied (small diced)
1 chopped green pepper
1 chopped yellow pepper
1 chopped red pepper
1/4 cup chopped parsley or fresh chives
1 cup sugar
1/2 cup distilled vinegar
1 cup water

   

Add water, vinegar, and sugar together.  Cook for 30 minutes over low heat.  Thicken with corn starch or arrowroot.  Put all ingredients in large mixing bowl.  Let base cool, then add all ingredients together.  Set in cool place for 2-5 days.

Chef's Tip:  For a quick version, purchase jars of Major Grey Chutney and add first six ingredients: 3 cups of nuts.
